This is a fairly plain bread, but after all the rich food yesterday, plain
is what I'm in the mood for.

English Barley Bread

2 pound loaf:

3/4 c water
2/3 c milk
1 large egg
 c molasses or honey
4 c bread flour
2/3 c barley flour
2 t salt
2 T butter
2  t yeast


1 pound loaf:

 c water
1/3 c milk
1 large egg
2 T molasses or honey
2 c bread flour
1/3 c barley flour
1 t salt
1 T butter
 T yeast

(I've always used the molasses.)


French Honey Bread for ABM

1-1/8 c water
1 tb honey
1 tb olive oil
1 ts salt
1 ts sugar
3 c bread flour
1 pk yeast

Place in pan, set to White Bread. 


German Rye Bread forABM

1 lb                                    1.5 lb.

2 tsp          active dry yeast         1 Tbsp
2 tsp          caraway seeds            1 Tbsp
1-1/2 cups     bread flour              2-1/4 cups
1 tsp          salt                     1-1/2 tsp
5 tsp          unsweetened cocoa        2-1/2 Tbsp
1 cup          rye flour                1-1/2 cups
7 oz           warm water               1-1/4 cups
1 tbsp         butter                   1-1/2 Tbsp
5 tsp          molasses                 2-1/2 Tbsp


Follow mfg instructions.

Hazelnut Bread for ABM 

1-1/2 pound Loaf                  (1 pound loaf):

1-1/2 teaspoons active dry yeast   (1 teaspoon)
2-1/4 cups bread flour             (1-1/2 cups)
3/4 cup whole-wheat flour          (1/2 cup)
2 tablespoons wheat germ           (2 tablespoons)
3 tablespoons dry milk powder      (2 tablespoons)
1/4 cup sugar plus 2 tablespoons   (1/4 cup)
3 tablespoons anise or fennel seed (2 tablespoons)
3 tablespoons vegetable oil        (2 tablespoons)
1 cup water plus 2 tablespoons     (3/4 cup)
3/4 cup hazelnuts, chopped         (1/2 cup)

Add all ingredients except the hazelnuts in the order suggested by
your bread machine manual and process on the basic bread cycle
according to the manufacturer's directions.

At the beeper (or at the end of the first kneading in the Panasonic
or National), add the hazelnuts.  Let cool or eat warm. 


Italian Cheese Bread for ABM

1 cup plus 2 tbsp water
4 tbsp buttermilk powder
1-1/2 tbsp vegetable oil
3 cups bread flour
1-1/2 tsp salt
1 tbsp white sugar
1/2 cups grated (fresh) Parmesan cheese
1/4 tsp dried basil leaves, crumbled
1/4 tsp dried oregano leaves, crumbled
1-1/2 tsp yeast

Place ingredients in ABM pan, in the order listed (or as directed by the
manufacturer of your machine), select the "light" setting for crust, and
start. 

Lemon Pear Pecan Bread for ABM
   
1 lb. Loaf:

3/4 cup pureed pears, peaches or apricots 
1 tablespoons water 	
1/2 teaspoons butter	
3/4 teaspoons salt 		
2 cups bread flour 	
1/3 cup pecans or hazelnuts, coarsely chopped 
2 tablespoon brown sugar 	
1-1/2 teaspoons lemon zest 
1-1/2 teaspoons active dry yeast 

1-1/2 lb. Loaf:

1 cup pureed pears, peaches or apricots
2 tablespoons water 
1 1/2 teaspoons butter 
1 teaspoon salt
3 cups bread flour
1/2 cup pecans or hazelnuts, coarsely chopped
1 tablespoon brown sugar
2 teaspoons lemon zest
2 teaspoons active dry yeast


Add ingredients to bread machine pan in the order suggested by
manufacturer, adding pears with water and pecans with flour.

Basic/white cycle. 


Lime Coconut Milk Bread for ABM

2-1/2 teaspoons active dry yeast
2 cups bread flour
1-1/4 cups whole-wheat flour
1/4 cup rolled oats
1/4 cup cornmeal
3 tablespoons sugar
1-1/2 teaspoons salt
3 tablespoons lime zest -- grated
1-1/2 tablespoons oil
3/4 cup coconut flakes
1/2 cup coconut milk -- unsweetened
1 cup water

Add all the ingredients in the order suggested by your manual.
Process on basic white bread. 


Maple Oatmeal for ABM

Makes a 2 lb loaf:

3 tsp yeast
1-1/3 cup oats
4 cups white flour
1-1/2 tsp salt
7 tsp maple syrup 
4 tsp oil 
1 1/2 cups water

Put in pan according to machine manual.  Set for regular loaf. 


Onion Dill Bread for ABM

1 pkg yeast 
3-1/3 c bread flour
1/4 tsp baking soda
1 egg 
1/4 c water
3/4 c cottage cheese 
3 Tbsp sugar 
3 tbsp dried onions -- minced
2 tbsp dill seed -- whole
1-1/2 tbsp butter
3/4 c sour cream 

Put all ingredients into pan in order given.

Peaches and Cream Bread for ABM

1/4 cup heavy or whipping cream 
1 large egg 
1-1/2 tablespoons canola oil 
3 tablespoons sugar 
1-1/2 cups peaches; peeled, pitted and chopped; fresh, frozen or canned, 
well-drained* 
1-1/2 teaspoons salt 
3-1/2 cups flour 
1/2 cup thick oat flakes or rolled oats 
1/2 teaspoon nutmeg 
1-1/2 teaspoons instant yeast 

*Note: If it's not peach season, one 16-ounce can of peaches, well-drained and 
chopped, works well. 

Place all of the ingredients into the pan of your bread machine, program the 
machine for basic white bread, light crust setting, and press Start. 

Check the dough after 10 to 15 minutes of kneading; it should have formed a 
smooth ball, soft but not sticky. If necessary, adjust the dough's consistency 
with additional flour or water. Yield: one 7 to 8-inch loaf.


Nutrition information per serving (1 slice, 1/14 of loaf, 65g): 162 cal, 3/5g 
fat, 4g protein, 26g complex carbohydrates, 2g sugar, 1g dietary fiber, 24mg

Pepperoni-Cheese Bread for ABM
            
1-1/4 cups water
3-1/4 cups flour
1/3 cup mozzarella cheese
2 tablespoons sugar
1-1/2 teaspoons garlic salt
1-1/2 teaspoons dry oregano
2-1/2 tsp regular yeast or 2-1/4 tsp bread machine yeast
                
Put ingredients in pan in order listed select white,
Add 2/3 cups pepperoni when machine beeps for add ins.
makes 1-1/2 pound loaf. 


Potato Chive Bread for ABM

2 tablespoons sour cream
1 large egg
1/2 cup mashed potatoes
4 tablespoons butter, softened
3/4 cup water
1 tablespoon fresh chives, or 1 teaspoon dried 
2 cups bread flour
1 cup whole wheat flour 
1 tablespoon sugar
1 teaspoon salt
1 tablespoon yeast

Put into the pan in the order correct for your bread machine.
Makes a 1 1/2 lb. loaf. 


Pumpernickel Bread for ABM

1-1/2 Pound Loaf:

1-1/4 cups warm water 
2 tablespoons canola oil
1/4 cup molasses
1-1/2 cups white bread flour
1/2 cup whole wheat flour
1 cup rye flour
4 teaspoons nonfat dry milk
2 tablespoons sugar
1-1/2 teaspoons salt
1/4 cup cornmeal 
3 tablespoons cocoa powder 
1/2 teaspoon instant coffee
2 teaspoons caraway seed
2 teaspoons fast rise or bread yeast or 3 teaspoons active dry yeast

Load bread machine according to machine standards.  Use this recipe
on the whole wheat cycle but can be made on the white or delay
cycles. 


Raspberry Marshmallow Bread for ABM

1 pkg yeast
2-3/4 c bread flour
2 tbsp gluten
1 tsp salt
1/8 tsp baking soda
1/2 c mini marshmallows
1 egg
2 tbsp oil
2/3 c water
1/2 cup raspberry syrup
10 oz frozen red raspberries, defrosted 

Place the first 9 ingredients into the pan in the order listed.
Select sweet bread and push start.  Add the reserved, well-drained
raspberries (2/3 cups) when the bread maker beeps. 

Rice Bread for ABM 01

2-1/4 tsp yeast
3 c bread flour
1-1/2 tsp salt
1 tbsp sugar
2 tbsp dry milk
1 tbsp butter
3/4 c cooked rice at room temperature
3/4 c water
1 egg
1 tsp lemon juice

Follow mfg instructions.


Rosemary Garlic Bread for ABM

1 pkg active dry yeast
1 c whole-wheat flour
2 c flour  
1 tsp salt
1 tsp ground pepper 
2 Tbsp oil
1-2 cloves garlic, crushed
1 tbsp dried parsley
1 tsp dried rosemary
1-1/2 tsp dried oregano
1-1/4 c warm water 

Follow mfg instructions. 


Russian Black Bread for ABM

1 pk yeast
1 tb white sugar
1-1/2 c bread flour
1-1/2 c medium rye flour
1/4 c whole wheat flour
1/2 c unprocessed bran flakes
1 tb caraway seeds
1 ts salt
1 ts instant coffee powder
1/4 ts fennel seeds
1 c plus 2 Tbsp water
2 tb molasses
2 tb cider vinegar
2 tb butter
1/2 oz unsweetened chocolate

Heat in a sauce pan over low heat the 1 cup + 2 tablespoons water,
molasses, vinegar, butter and chocolate, stirring frequently till
chocolate and butter melt.  Cool.

Add all ingredients to the pan, select wheat cycle and push start. 


Sausage, Herb, & Onion Bread for ABM

6 oz Italian sausage
1 med onion, minced
2-1/4 ts yeast
3 c bread flour
3/8 c wheat bran
1-1/2 tb sugar
1/2 tb salt
1-1/2 tb Parmesan, grated
3/4 ts thyme leaves
3/4 ts rosemary leaves
3/4 ts oregano leaves
3/4 ts basil leaves
1-1/8 c water

Remove casing from sausage and crumble meat into medium nonstick
skillet.  Cook over medium heat, stirring to break up sausage,
until it begins to render its juices, about 3 minutes. Add onion
and cook until sausage is no longer pink and onion softens, about
5 minutes. Remove from heat and let cool.

Bring all ingredients to room temperature and pour into machine in
order.  Select "white bread" and push Start.

In hot and humid weather, use 1/8 c less water. 


Sourdough Bread for ABM

1/2 c Water, warm
1 c Sourdough Starter
2 1/4 c Bread Flour
1 tb Sugar
1 tb Oil
1 ts Salt
3/4 tb Yeast

Place ingredients in order in bread machine. Makes large loaf in Hitachi.
Use quick setting, if it rises too long, it gets flats 


Soy Flour Bread for ABM

1-1/2 c warm water 
1/4 c full-fat soy flour 
2-1/4 t dry yeast (1 pkg)
3/8 c skim-milk powder 
1 T sugar or honey 
2 t salt 
3-1/2 c flour
1 T salad oil

Mix the dry ingredients together and add them.  Mix the oil with the water and
pour on top.  Hit the "start" button.  If necessary, open the bread 
machine and use a spatula to make sure all dry ingredients are moistened
and incorporated into the dough. 


Spelt Bread for ABM

1-lb

2 cups spelt flour
1 tsp yeast
1/2 tsp sea salt
1 tbsp lecithin or vegetable oil 
3/4 cup apple juice


1-1/2 lb. Loaf:

3 cups spelt flour
1-1/2 tsp yeast
3/4 tsp sea salt
1-1/2 tbsp lecithin or vegetable oil 
1 cup + 2 Tbsp apple juice 			

Follow mfg instructions.

Spiced Pumpkin Bread for ABM

1 ts yeast
2-1/2 c bread flour
2 tb brown sugar
1/2 tb salt
1 tb pumpkin pie spice
1 c pumpkin
3 tb oil
2 eggs
1/4 c water

Bring all ingredients to room temperature and pour into machine in
order.  Select "white bread" and push Start.

In hot, humid weather, reduce water by 1/8 c. 

Spinach Feta Bread for ABM

3/4 c frozen chopped spinach
2-1/4 teaspoons yeast
3 c bread flour
1/3 c wheat bran
1-1/2 tablespoons sugar
1/2 tablespoon salt
1/2 tablespoon nutmeg
1/2 teaspoon black pepper
3 tablespoons oil
1 egg
1/3 c feta cheese 
1/2 c water

Defrost spinach but do not cook.  Squeeze out all the liquid.

Bring all ingredients to room temperature and add to machine.
Select white bread cycle. 

Strawberry Cream Cheese Bread for ABM

1 LB. LOAF

1/3 c milk
1/3 c mashed strawberries
1/3 c cream cheese
1 tb butter
2 tb honey
1 t salt
1/2 c oatmeal
1-1/2 c bread flour
1-1/2 ts yeast

Put in order your bread machine suggests. 


Yogurt Pumpkin Bread for ABM
     
2 teaspoons active dry yeast
3 cups bread flour
3 tablespoons wheat germ
3 tablespoons powdered milk
3 tablespoons sugar
1/2 teaspoon ground ginger
3/4 teaspoon ground cinnamon
1-1/2 teaspoons salt
1 cup pumpkin
2 tablespoons pumpkin
1/3 cup plain yogurt
1/3 cup water
1/3 cup pecans -- chopped
1/3 cup raisins

Add all ingredients except the pecans and raisins in the order
suggested by your manual and process on the raisin bread cycle. At the
beeper add the pecans and raisins.
